Shakshuka

Shakshuka is a Middle Eastern / North African dish which is basically an Omelette with Tomatoes and other vegetables. There are countless variations of this dish - This is my personal favorite so far. Shakshuka is a really nice breakfast to make on weekend mornings. This is a really easy recipe and you can easily change it to your own taste.


Time: 45 Minutes


Servings: 5


Ingredients:

6 Eggs

2 Big Tomatoes

1 Big Onion

2 Garlic Cloves

1 Chilli Pepper Red or Green

Some Cilantro

Some Parsley

A Small Pack of Tomato Puree/Sauce

2 Spoons of Salt

1 Spoon of Black Pepper

1 Cup of Water

a Pinch of Sugar



Directions:

1. Chop the Onion and saute it in a pan on high heat with some cooking oil. Once translucent, add the chopped Garlic.


2. Chop the Chili Pepper and add it.


3. Chop the Tomatoes and add them.


4. Chop the Cilantro and Parsley and add them.


5. Saute everything for about 5 minutes.


6. Add the Tomato puree/Sauce and a cup of water and mix everything.


7. Add the Salt, Pepper and Sugar and mix.


8. Cook for about 5 minutes.


9. Lower the heat to minimum and crack open the eggs and add them on the top without mixing or touching them.


10. Add a pinch of Salt and Black Pepper on top of the eggs.


11. Cover the pan with a lid.


12. Cook for about 20 minutes or until you poke the eggs and they hard hard.


Tips and Comments:

*Chili Pepper is not a must. I personally like my Shakshuka spicy.

*Cilantro is not a must - If you don't like just don't use it.

*Watch out for the Tomatoes when eating as they tend to store a lot of heat.

*The pinch of Sugar is there to prevent the dish from being too acidic.

*Serve with bread! Usually a loaf of soft white bread goes well with this dish.
