Mulukhiyah

Mulukhiya is a plant similar to Spinach that is used for one dish in the Arabic Kitchen. It is usually cooked with chicken or beef. Check out the Wikipedia page - apparently it's called "Jute mallow" in English.


Time: 1 Hour 30 Minutes


Servings: 10


Ingredients:

Half a Kilo of Mulukhiya

1 Whole Chicken

2 Cups of Rice

10 Cloves of Garlic

2 Spoons of salt

Chicken Spices Mixture

Water



Directions:

1. Place the Mulukhiya leaves in a bowl of water with salt for 20 minutes

2. Saute the Garlic Cloves until golden and put them aside

3. Put some cooking oil in a deep pot and fry the whole Chicken from the sides

4. Once the Chicken receives some color, cover it up with water

5. Add Salt and Spices. The Spices can be Black Pepper, Corriander Seed Powder, Cumin, Baharat, etc

6. Cook the Chicken in the water on high heat for about an hour with the lid slightly cracked open

7. Wash off the Mulukhiya leaves and saute them in a frying pan. Don't add any oil or water, simply place the leaves and saute them for about 15 minutes on medium heat

8. Take out the Mulukhiya leaves and place them in a bowl on the side

9. Once the Chicken is cooked, remove it from the water and put it on the side to cool down

10. Take apart the Chicken, removing all of the bones and skin and undesired bits and pieces

11. Place the Chicken meat back in the water and add the Mulukhiya leaves

12. Stir gently and add some salt to taste

13. Cook on medium heat for 15 minutes

14. Cook any type of Rice that you like



Tips and Comments:

*Some people will chop the Mulukhiya into fine bits before cooking it. I personally don't think that's necessary.

*The Mulukhiya has a slimy texture when cooked so don't be alarmed - that's how it's supposed to be!

*Server in a bowl on top of Rice and squeeze a lot of Lemon!
